A delicious and healthy sweet potato boat filled with savory seasoned beef, creamy cottage cheese, and a spicy-sweet hot honey drizzle.
Ingredients
2 small sweet potatoes
1/2 lb ground beef
1/2 tsp salt
1/2 tsp smoked paprika
2/3 cup cottage cheese
1/2 avocado, sliced
3 tsp hot honey
1/4 tsp black pepper
Instructions
Step 1: Preheat oven to 400°F (200°C). Prick sweet potatoes with a fork and roast on a baking sheet for 45-50 minutes until soft.
Step 2: While potatoes roast, brown the ground beef in a skillet over medium heat. Drain excess fat.
Step 3: Season the beef with salt and smoked paprika, stirring well to combine.
Step 4: Slice the roasted sweet potatoes open lengthwise and mash the centers slightly with a fork.
Step 5: Divide the seasoned beef between the two potatoes.
Step 6: Top with cottage cheese, avocado slices, a drizzle of hot honey, and black pepper.
Notes
For a leaner option, ground turkey or chicken can be used in place of beef. Adjust the hot honey drizzle according to your spice preference.
