A delicious and high-protein meal bowl featuring spicy-sweet beef, roasted sweet potatoes, and creamy avocado.
Ingredients
1 lb lean ground beef (93%)
2 medium sweet potatoes, peeled and diced
1 sliced avocado
1 cup cottage cheese
1 diced yellow onion
2 tbsp olive oil
1 packet taco seasoning
2 tbsp hot honey
Instructions
Step 1: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Step 2: Toss diced sweet potatoes with 1 tbsp olive oil and roast for 20-25 minutes until tender.
Step 3: Sauté diced yellow onion in a skillet with 1 tbsp olive oil until translucent.
Step 4: Add ground beef to the skillet, cook until browned, and drain excess fat if necessary.
Step 5: Stir in taco seasoning and 1 tbsp of hot honey, simmering for 2-3 minutes.
Step 6: Assemble the bowls by layering roasted sweet potatoes, the beef mixture, a dollop of cottage cheese, and avocado slices.
Step 7: Finish with a final drizzle of hot honey over each bowl.
Notes
For extra crunch, add roasted pumpkin seeds or a sprinkle of fresh cilantro before serving.
