Ingredients
2 large sweet potatoes, sliced into 1/2-inch rounds
2 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
8 oz Brie cheese, sliced into small pieces
1/4 cup chopped pecans
3 tbsp hot honey
Fresh rosemary for garnish
Instructions
Step 1: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Step 2: Toss the sweet potato rounds with olive oil, salt, and pepper until well coated.
Step 3: Place the potatoes on the baking sheet in a single layer and roast for 20-25 minutes, flipping once.
Step 4: Top each roasted round with a piece of Brie and a few pecans.
Step 5: Bake for another 3-5 minutes until the cheese is melted and bubbly.
Step 6: Remove from the oven, drizzle with hot honey, and garnish with rosemary before serving.
Notes
Ensure sweet potatoes are sliced evenly for consistent roasting. Use cold Brie for easier slicing.
