4 bone-in or boneless pork chops (about 1-inch thick)
1 tablespoon olive oil
Salt and freshly ground black pepper to taste
1/2 cup packed light brown sugar
1/4 cup low sodium soy sauce
2 tablespoons apple cider vinegar
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1/2 teaspoon onion powder
2 tablespoons unsalted butter


Instructions

Step 1: Pat the pork chops dry thoroughly with paper towels. Season generously on both sides with salt and pepper.
Step 2: Heat olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the seasoned pork chops and sear for 3-4 minutes per side until golden brown. Remove the chops from the skillet and set them aside.
Step 3: In a small bowl, whisk together the brown sugar, soy sauce, apple cider vinegar, Worcestershire sauce, garlic powder, and onion powder until well combined.
Step 4: Reduce the heat to medium. Add the unsalted butter to the skillet, letting it melt. Pour in the prepared brown sugar mixture. Bring the sauce to a gentle simmer, stirring constantly, until it thickens slightly, about 2-3 minutes.
Step 5: Return the seared pork chops to the skillet, spooning the glaze over them. Continue to cook, flipping occasionally and basting with the glaze, for another 5-8 minutes, or until the internal temperature of the pork chops reaches 145°F (63°C) when checked with a meat thermometer.
Step 6: Remove the pork chops from the skillet and transfer them to a plate or cutting board. Let them rest for at least 5 minutes before serving to allow the juices to redistribute, ensuring maximum tenderness. Drizzle with any remaining glaze from the skillet and serve hot.

Notes

For an extra kick, a pinch of red pepper flakes can be added to the glaze. Ensure your skillet is large enough to sear the chops without overcrowding, which can lead to steaming instead of searing.
