Ingredients

  • ½ cup unsalted butter, melted
  • 2 tbsp granulated sugar
  • 1 cup granulated sugar (for caramel)
  • ½ cup unsalted butter (for caramel)
  • ½ cup heavy cream (for caramel)
  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy cream (for chocolate topping)
  • Sea salt for sprinkling (optional)
  • Chopped nuts for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In medium bowl, mix graham cracker crumbs, melted butter, and 2 tbsp sugar; press evenly into bottom of prepared dish.
  3. Bake crust for about 10 minutes until lightly golden; let cool completely.
  4. In medium saucepan over medium heat, melt 1 cup sugar, stirring constantly, until deep amber color.
  5. Remove from heat; stir in ½ cup butter until melted.
  6. Gradually stir in ½ cup heavy cream until smooth and creamy.
  7. Pour caramel sauce evenly over cooled crust; refrigerate 30 minutes until set.
  8. Heat ½ cup heavy cream in small saucepan over medium heat until simmering.
  9. Remove from heat; stir in chocolate chips until melted and smooth.
  10. Pour chocolate ganache evenly over chilled caramel layer; refrigerate 1 hour until set.
  11. Optionally sprinkle sea salt and garnish with chopped nuts.
  12. Cut bars into squares and serve chilled.

Notes

Bake the crust until lightly golden for crispness. Use a spatula to evenly spread caramel and chocolate layers. Customize with vanilla extract, cinnamon, or peanut butter drizzle. Substitute crust with vanilla wafer or shortbread crust. Use milk or dark chocolate chips if preferred. For healthier versions, use low-fat ingredients and reduce sugar.
