Description

A viral, low-carb salad featuring zesty deli meats, provolone cheese, and a creamy Italian vinaigrette.


Ingredients

1 large head of iceberg lettuce, shredded
1/2 red onion, thinly sliced
1/2 cup pepperoncini, sliced
1 cup cherry tomatoes, halved
4 oz Genoa salami, chopped
4 oz pepperoni, chopped
4 oz deli turkey or ham, chopped
1/2 cup provolone cheese, diced
1/2 cup mayonnaise
2 tbsp red wine vinegar
1 clove garlic, minced
1 tsp dried oregano
1/2 tsp red pepper flakes
1/4 cup grated Parmesan cheese
Salt and pepper to taste


Instructions

Step 1: Shred the iceberg lettuce into thin ribbons and place in a large bowl.
Step 2: Add the thinly sliced red onions, halved cherry tomatoes, and sliced pepperoncini peppers.
Step 3: Chop the salami, pepperoni, and turkey into bite-sized pieces and add them to the bowl along with the diced provolone.
Step 4: In a small mixing jar, whisk together mayonnaise, red wine vinegar, minced garlic, oregano, red pepper flakes, salt, and pepper until smooth.
Step 5: Pour the dressing over the salad and toss thoroughly to ensure all ingredients are coated evenly.
Step 6: Sprinkle with grated Parmesan cheese and serve immediately while the lettuce is crisp.

Notes

To keep this salad crisp for leftovers, store the dressing in a separate container and only mix as much as you plan to eat immediately.
