Description

A delightful Southern dessert featuring a unique filling of graham cracker crumbs, toasted pecans, and shredded coconut in a sweet custard.

Ingredients

Scale

One 9-inch deep-dish pie crust
1 1/2 cups graham cracker crumbs
1 cup granulated sugar
1/2 cup (1 stick) unsalted butter, melted
1/2 cup shredded unsweetened coconut, lightly toasted (optional)
1/2 cup chopped pecans, lightly toasted (optional)
3 large eggs
1 teaspoon vanilla extract
Pinch of salt
Sweetened whipped cream or vanilla ice cream for serving (optional)

Instructions

Step 1: Preheat your oven to 350°F (175°C). If desired, blind bake your pie crust for 10-15 minutes to prevent sogginess, then let cool slightly.
Step 2: In a large bowl, combine the graham cracker crumbs, granulated sugar, melted butter, shredded coconut, and chopped pecans. Mix until well combined and the crumbs are moistened. This is your 'sawdust' mixture.
Step 3: In a separate medium bowl, whisk together the eggs, vanilla extract, and a pinch of salt until smooth.
Step 4: Pour the egg mixture into the 'sawdust' mixture and stir gently until everything is evenly combined. Do not overmix.
Step 5: Pour the filling into the prepared pie crust, spreading it evenly with a spatula.
Step 6: Bake for 40-45 minutes, or until the edges are set and lightly golden, and the center has a slight wobble when gently shaken. The pie will set further as it cools.
Step 7: Remove the pie from the oven and let it cool completely on a wire rack before slicing and serving. This allows the pie to fully set and ensures clean slices.
Step 8: Serve at room temperature or slightly chilled, perhaps with a dollop of whipped cream or a scoop of vanilla ice cream if desired. Enjoy!

Notes

For an extra layer of flavor, you can brush the cooled pie crust with a thin layer of melted chocolate before adding the filling. Ensure your eggs are at room temperature for better incorporation into the filling.
