A rich, cheesy, and low-carb dinner that combines tender chicken and broccoli in a decadent cream sauce.
Ingredients
2 lbs boneless skinless chicken breasts, cubed
1 lb fresh broccoli florets
1 cup heavy cream
4 oz cream cheese, softened
2 cups shredded sharp cheddar cheese
1/2 cup grated parmesan cheese
2 cloves garlic, minced
1 tsp onion powder
1/2 tsp smoked paprika
Salt and pepper to taste
1 tbsp avocado oil
Instructions
Step 1: Preheat oven to 375°F (190°C) and grease a 9x13 baking dish.
Step 2: Sauté seasoned chicken in avocado oil until browned; place in baking dish with broccoli.
Step 3: Whisk heavy cream, cream cheese, parmesan, and spices in a pan until smooth and melted.
Step 4: Stir in 1 cup of cheddar cheese into the sauce until incorporated.
Step 5: Pour sauce over chicken and broccoli, then top with remaining cheddar.
Step 6: Bake for 20-25 minutes until bubbly and golden.
Notes
Use a block of cheddar and grate it yourself for a smoother melt and to avoid hidden starches.
