Description
A crunchy, low-carb take on the classic Reuben sandwich using a cheese-based shell and savory corned beef filling.
Ingredients
12 slices Swiss cheese (thick cut is better)
6 oz thinly sliced deli corned beef
1/2 cup sauerkraut, drained and squeezed dry
2 tbsp sugar-free Russian dressing (optional for dipping)
1/4 tsp caraway seeds (optional for rye flavor)
Instructions
Step 1: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Step 2: Arrange the Swiss cheese slices on the parchment paper, leaving enough space for them to spread as they melt.
Step 3: Bake for 5-7 minutes until the edges are dark golden brown and the cheese is lacey and bubbling.
Step 4: Remove from the oven and quickly place half a slice of corned beef and a small pinch of dried sauerkraut on one end of each cheese slice.
Step 5: Let cool for 30 seconds, then roll the cheese over the filling tightly. Let sit for 1 minute to fully crisp up before serving.
Notes
Ensure the sauerkraut is as dry as possible to maintain the crispiness of the cheese shell.
