Description

A deliciously lacy and crunchy low-carb alternative to the classic Reuben sandwich using fried Swiss cheese as a shell.

8 slices corned beef
1/2 cup sauerkraut, drained
2 tablespoons keto-friendly Thousand Island dressing
1 tablespoon butter or oil for cooking


Instructions

Step 1: Drain the sauerkraut thoroughly by pressing it in a mesh strainer and patting it dry with paper towels to ensure the Keto Crispy Reuben Roll-Ups don't get soggy.
Step 2: Heat a non-stick skillet over medium-low heat and add a tiny bit of butter.
