Description
Soft, chewy, and rich low-carb cookies packed with cream cheese, pecans, and protein, perfect for a guilt-free keto treat.
Ingredients
4 oz cream cheese, softened
2 tbsp butter, softened
1 large egg
1 tsp vanilla extract
½ cup vanilla whey or unflavored protein powder
½ cup almond flour
â…“ cup powdered erythritol (or monk fruit blend)
½ tsp baking powder
Pinch of salt
½ cup chopped pecans
Instructions
Step 1: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
Step 2: In a medium bowl, beat softened cream cheese and butter until smooth and well combined.
Step 3: Add the large egg and vanilla extract, mixing thoroughly until incorporated.
Step 4: Gradually stir in the protein powder, almond flour, powdered erythritol (or monk fruit blend), baking powder, and a pinch of salt until a thick dough forms.
Step 5: Gently fold in the chopped pecans until evenly distributed throughout the cookie dough.
Step 6: Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving some space between each. Lightly flatten each cookie with the back of a spoon or your fingers.
Step 7: Bake for 10–12 minutes, or until the edges are lightly golden brown. Be careful not to overbake.
Step 8: Remove from the oven and let the cookies cool completely on the baking sheet before transferring. They will firm up considerably as they cool, achieving the perfect texture.
Notes
For best results, ensure your cream cheese and butter are at room temperature for a smoother dough. These cookies firm up as they cool, so patience is key for the perfect texture!
