Description

A delightful no-bake dessert combining the classic crunch of Rice Krispie treats with the bright, tangy flavors of key lime pie and a hint of graham cracker crust.


Ingredients

6 cups Rice Krispies cereal
1 (10.5 ounce) bag mini marshmallows
4 tablespoons unsalted butter
1/4 cup fresh key lime juice (or regular lime juice)
2 teaspoons key lime zest (from 2-3 key limes)
1/2 teaspoon vanilla extract
1/4 teaspoon key lime extract (optional, for stronger flavor)
1/2 cup graham cracker crumbs (finely crushed)
Pinch of salt
Green food coloring (optional, a few drops)


Instructions

Step 1: Grease a 9x13 inch baking pan with butter or non-stick spray, or line with parchment paper, leaving an overhang on the sides. Set aside.
Step 2: In a large pot or Dutch oven, melt the butter over low heat. Add the marshmallows and stir constantly until completely melted and smooth. Remove from heat.
Step 3: Stir in the key lime juice, key lime zest, vanilla extract, key lime extract (if using), and a pinch of salt. If desired, add a few drops of green food coloring and mix until combined.
Step 4: Add the Rice Krispies cereal and graham cracker crumbs to the marshmallow mixture. Stir quickly but gently until the cereal and crumbs are evenly coated.
Step 5: Transfer the mixture to the prepared baking pan. Using a buttered spatula or your hands (lightly dampened or buttered), gently press the mixture evenly into the pan. Do not press too firmly, or the treats will be hard.
Step 6: Allow the treats to cool completely at room temperature for at least 30 minutes, or chill in the refrigerator for 15-20 minutes to set faster.
Step 7: Once set, cut into squares and serve. Store in an airtight container.

Notes

For an extra tangy kick, drizzle with a simple lime glaze (powdered sugar + lime juice) after they've set. You can also mix in some white chocolate chips for added sweetness. For easier cutting, line your pan with parchment paper, leaving an overhang on the sides.
