  • Total Time: 30 minutes
  • Yield: 24 bars 1x

Description

Fast, foolproof Lazy Cake Cookies made with spice cake mix, eggs, oil, and chocolate chips for soft, chewy cookie bars that are perfect for any occasion.

Ingredients

Scale
  • 1 box yellow cake mix (15.25 oz) or spice cake mix
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 cup chocolate chips
  • Optional: ½ cup chopped nuts, sprinkles, or M&Ms

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish or line with parchment paper.
  2. In a large bowl, combine cake mix, eggs, and vegetable oil; stir until thick and sticky dough forms.
  3. Fold in chocolate chips and any optional mix-ins.
  4. Press dough evenly into prepared pan, smoothing the surface.
  5. Bake 20–25 minutes until edges are golden and center is just set.
  6. Cool completely on a wire rack before slicing for clean bars.

Notes

Use any cake mix flavor you like. Store bars in an airtight container at room temperature up to 5 days; add a slice of bread to keep moist. Freeze cooled bars up to 2 months. For gooey bars, bake closer to 20 minutes and serve slightly warm.
