1/2 cup unsalted butter, melted
2 (3.4 ounce) packages lemon instant pudding mix
4 cups cold milk
1 (8 ounce) container whipped topping, thawed
1 (21 ounce) can blueberry pie filling


Instructions

Step 1: Prepare the Crust. In a medium bowl, combine the graham cracker crumbs and melted butter. Mix well until the crumbs are evenly moistened.
Step 2: Form the Base. Press the graham cracker mixture firmly and evenly into the bottom of a 9x13 inch baking dish. Use the bottom of a glass or your hands to compact it tightly.
Step 3: Create the Lemon Layer. In a large mixing bowl, whisk together the lemon instant pudding mix and cold milk for about 2 minutes, until the mixture thickens. Gently fold in the thawed whipped topping until no streaks remain and the mixture is light and smooth.
Step 4: Assemble the Layers. Carefully spread the lemon pudding mixture evenly over the graham cracker crust in the baking dish. Use a spatula to create a smooth surface.
Step 5: Add the Blueberries & Chill. Spoon the blueberry pie filling over the lemon layer, spreading it out evenly to cover the entire surface. Refrigerate the dessert for at least 4 hours, or preferably overnight, to allow all the layers to set completely before serving.

Notes

For an extra burst of lemon flavor, add 1 teaspoon of fresh lemon zest to the pudding mixture in Step 3. Ensure all ingredients, especially the milk and pudding mix, are very cold for optimal setting. If using fresh blueberries, you can make a simple compote by simmering 2 cups of blueberries with 2 tablespoons sugar and 1 tablespoon lemon juice until thickened, then cool completely before using.
