Description
A zesty and creamy one-pot Mediterranean-inspired dinner featuring tender chicken and orzo pasta.
Ingredients
1.5 lbs chicken breast, cubed
1.5 cups dry orzo pasta
3 cups chicken broth
2 lemons (juiced and zested)
4 cloves garlic, minced
2 cups fresh spinach
1/2 cup grated parmesan cheese
2 tbsp olive oil
1 tbsp butter
1 tsp dried oregano
Salt and pepper to taste
Instructions
Step 1: Season diced chicken with salt, pepper, and oregano.
Step 2: Sear chicken in olive oil in a large skillet until golden; remove and set aside.
Step 3: Sauté garlic in butter in the same skillet until fragrant.
Step 4: Add orzo and toast for 2 minutes, stirring frequently.
Step 5: Pour in chicken broth and bring to a simmer; cover and cook for 8-10 minutes.
Step 6: Stir in lemon juice, zest, spinach, parmesan, and cooked chicken.
Step 7: Cook for 2 more minutes until spinach is wilted and sauce is creamy.
Notes
For an extra creamy finish, stir in a splash of heavy cream at the very end.
