Ingredients
1/2 cup cottage cheese (2% or 4% recommended)
1 large egg
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
3 tablespoons oat flour or almond flour
1 tablespoon maple syrup or honey
1/2 teaspoon baking powder
1/4 teaspoon vanilla extract
Instructions
Step 1: In a large microwave-safe mug, whisk together the cottage cheese, egg, lemon juice, lemon zest, sweetener, and vanilla extract until well combined.
Step 2: Add the oat flour and baking powder to the wet mixture and stir until a thick batter forms.
Step 3: Place the mug in the microwave and cook on high for 90 seconds to 2 minutes, or until the top is set and firm to the touch.
Step 4: Let the cake sit for 1 minute before serving. Garnish with more zest or a drizzle of honey if desired.
Notes
For a smoother texture, blend the cottage cheese before adding other ingredients. Do not overcook or the protein will become tough.
