Ingredients
1 ½ cups all-purpose flour
1 teaspoon baking powder

½ cup granulated sugar
2 large eggs, room temperature

Instructions
Step 1: Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan, or line it with parchment paper for easy removal.
Step 2: In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set the dry ingredients aside.
Step 3: In a large mixing bowl, whisk together the granulated sugar, large eggs, sour cream, canola oil, fresh lemon juice, lemon zest, and vanilla extract until the mixture is smooth and well combined.
