Description
A zesty, buttery, one-pot side dish featuring tender orzo pasta infused with garlic and fresh lemon.
Ingredients
2 tablespoons butter
3 cloves garlic, minced
1 cup uncooked orzo pasta
2 cups vegetable broth
1 teaspoon coarse salt
1 teaspoon pepper
1/4 teaspoon onion powder
3 tablespoons lemon juice
1 tablespoon finely chopped parsley
Instructions
Step 1: Melt 2 tablespoons of butter in a medium skillet over medium heat.
Step 2: Add 3 cloves of minced garlic and sauté for 1 minute until fragrant but not browned.
Step 3: Stir in 1 cup of uncooked orzo and toast slightly for about 1 minute.
Step 4: Add 2 cups of vegetable broth, 1 teaspoon salt, 1 teaspoon pepper, and 1/4 teaspoon onion powder. Stir well.
Step 5: Bring to a boil, then reduce heat to low, cover, and simmer for 10-12 minutes until liquid is absorbed and pasta is tender.
Step 6: Remove from heat and stir in 3 tablespoons of lemon juice and 1 tablespoon of chopped parsley. Serve immediately.
Notes
For a deeper flavor, you can toast the orzo until it is golden brown before adding the broth. Freshly squeezed lemon juice is essential for the best taste.
