A zesty, one-pan weeknight dinner featuring tender chicken, healthy broccoli, and flavorful orzo pasta in a bright citrus sauce.
Ingredients
1.5 lbs chicken breast, diced
1.5 cups dry orzo pasta
3 cups chicken broth
2 cups fresh broccoli florets
2 tablespoons lemon pepper seasoning
1 tablespoon fresh lemon zest
2 tablespoons fresh lemon juice
3 cloves garlic, minced
1/2 yellow onion, diced
2 tablespoons olive oil
1 tablespoon butter
1/4 cup grated Parmesan cheese
Instructions
Step 1: Season diced chicken with 1 tablespoon of lemon pepper seasoning.
Step 2: Heat olive oil and butter in a large skillet; sear chicken until browned and remove from pan.
Step 3: Sauté onion and garlic in the same skillet until soft.
Step 4: Add orzo and toast for 2 minutes, stirring constantly.
Step 5: Stir in chicken broth and remaining lemon pepper; bring to a simmer.
Step 6: Add broccoli and chicken back to the pan, cover, and cook for 10-12 minutes.
Step 7: Stir in lemon juice, zest, and Parmesan before serving.
Notes
To make it spicy, add 1/2 teaspoon of red pepper flakes with the garlic.
