A zesty and refreshing take on the classic marshmallow cereal treat with fresh lemon zest and juice.
Ingredients
6 cups crisp rice cereal
10 oz fresh marshmallows
4 tbsp unsalted high-quality butter
2 tbsp fresh lemon zest
1 tbsp fresh lemon juice
1/2 tsp pure vanilla extract
1 pinch fine sea salt
Instructions
Step 1: Line an 8x8 inch baking pan with parchment paper and set aside.
Step 2: In a large pot over low heat, melt the butter and stir in the lemon zest for 1 minute.
Step 3: Add marshmallows and stir constantly until fully melted and smooth.
Step 4: Remove from heat and stir in lemon juice, vanilla, and salt.
Step 5: Gently fold in the rice cereal until every grain is evenly coated.
Step 6: Press the mixture gently into the pan and let cool for 45 minutes before slicing.
Notes
Ensure you melt the marshmallows on low heat to keep the treats soft and chewy.
