Ingredients
12 oz pasta (spaghetti, fettuccine, or your choice)
1 cup ricotta cheese
Zest and juice of 1 large lemon
1/2 cup grated Parmesan cheese, plus more for serving
2 tablespoons olive oil
2 cloves garlic, minced
Salt to taste
Freshly ground black pepper to taste
Fresh basil or parsley, chopped (for garnish, optional)
Instructions
Step 1: Cook the Pasta: In a large pot, bring generously salted water to a rolling boil. Add your chosen pasta and cook according to package directions until it's perfectly al dente. Before draining, make sure to reserve about 1 cup of the starchy pasta water.
Step 2: Prepare the Aromatic Base: While the pasta is cooking, heat the olive oil in a large skillet or pan over medium heat. Add the minced garlic and sauté gently for about 1 minute, just until it becomes fragrant. Be careful not to let it brown or burn, as this can make the garlic bitter.
Step 3: Whisk the Ricotta Sauce: In a medium mixing bowl, combine the creamy ricotta cheese, the bright lemon zest, fresh lemon juice, and half of the grated Parmesan cheese. Whisk everything together until the mixture is beautifully smooth and well combined.
Step 4: Combine & Coat: Add the drained, cooked pasta directly to the skillet with the sautéed garlic. Pour the ricotta mixture over the hot pasta. Toss everything together, using tongs, to ensure every strand of pasta is coated in the luxurious sauce. If the sauce appears too thick or needs a little loosening, gradually add some of the reserved pasta water, a tablespoon at a time, until it reaches your desired creamy consistency.
Step 5: Season to Perfection: Taste the pasta and season generously with salt and freshly ground black pepper. Adjust according to your preference. Give it another good toss to distribute the seasonings evenly.
Step 6: Serve and Enjoy: Divide the Lemon Ricotta Pasta among serving bowls. Garnish with the remaining grated Parmesan cheese and a sprinkle of fresh basil or parsley, if using. Serve warm and savor every zesty, creamy bite!
