A vibrant green, tangy mocktail made with fresh lemons and natural sweeteners, perfect for celebrating St. Patrick's Day.
Ingredients
1 cup fresh lemon juice (about 6–8 lemons)
4 cups cold water
1/2 cup honey, agave syrup, or simple syrup
2 drops green food coloring or 2 teaspoons spinach juice
2 cups ice cubes
1 fresh mint sprig for garnish
1 lemon sliced into wheels
Instructions
Step 1: Squeeze lemons to collect 1 cup of juice, ensuring all seeds are removed.
Step 2: In a large pitcher, combine the cold water and lemon juice, stirring well.
Step 3: Add the honey or agave syrup and whisk until the sweetener is completely dissolved.
Step 4: Mix in the green food coloring or spinach juice until the lemonade is a bright, festive green.
Step 5: Fill glasses with ice and pour the Leprechaun Lemonade over the top, garnishing with lemon and mint.
Notes
For a sparkling version, replace 2 cups of still water with lemon-lime soda or club soda just before serving.
