Ingredients
2 lbs Russet potatoes, peeled and cut into 1-inch cubes
6 slices bacon, cooked and crumbled
1 cup shredded sharp cheddar cheese
1/4 cup chopped fresh chives
1/4 cup olive oil or melted butter
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika

Instructions
Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
Step 2: Place the cubed potatoes in a large pot and cover with cold water. Add a generous pinch of salt. Bring to a boil over medium-high heat, then reduce heat and simmer for 5-7 minutes, or until the potatoes are just tender when pierced with a fork but still hold their shape.
