Description

Crispy on the outside, fluffy on the inside, these loaded country-style potatoes are packed with savory bacon, melted cheese, and fresh chives, making them an unforgettable side dish for any meal.

2 lbs Russet potatoes, peeled and cut into 1-inch cubes
6 slices bacon, cooked and crumbled
1 cup shredded sharp cheddar cheese
1/4 cup chopped fresh chives
1/4 cup olive oil or melted butter
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
Salt and freshly ground black pepper to taste


Instructions

Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
Step 2: Place the cubed potatoes in a large pot and cover with cold water. Add a generous pinch of salt. Bring to a boil over medium-high heat, then reduce heat and simmer for 5-7 minutes, or until the potatoes are just tender when pierced with a fork but still hold their shape.
Step 3: Drain the potatoes thoroughly in a colander. Return them to the empty pot and gently shake the pot to rough up the edges of the potatoes. This creates more surface area for crisping.
Step 4: Drizzle the potatoes with olive oil (or melted butter). Sprinkle with garlic powder, onion powder, paprika, salt, and pepper. Toss gently to ensure all potatoes are evenly coated.
Step 5: Spread the seasoned potatoes in a single layer on the prepared baking sheet. Ensure they are not overcrowded. If necessary, use two baking sheets.
Step 6: Roast for 20 minutes. Flip the potatoes and continue to roast for another 10-15 minutes, or until golden brown and crispy.
Step 7: Remove the baking sheet from the oven. Sprinkle the cooked bacon and shredded cheddar cheese evenly over the hot potatoes.
Step 8: Return to the oven for 3-5 minutes, or until the cheese is melted and bubbly.

Notes
