Description
A hearty, creamy pasta salad featuring rotini, bacon, black beans, corn, and a zesty BBQ ranch dressing.
Ingredients
16 oz rotini pasta
1 lb thick-cut bacon, cooked and crumbled
1 can (15 oz) black beans, rinsed and drained
2 cups sweet corn (fresh or frozen)
1 cup cherry tomatoes, halved
1/2 cup red onion, finely diced
1 cup sharp cheddar cheese, cubed
1/4 cup fresh cilantro, chopped
1 cup mayonnaise
1/2 cup sour cream
1/4 cup BBQ sauce
1 packet (1 oz) dry ranch dressing mix
Instructions
Step 1: Cook rotini in salted boiling water until al dente, then drain and rinse with cold water.
Step 2: Fry the bacon until crispy, drain on paper towels, and crumble into pieces.
Step 3: In a small bowl, whisk mayonnaise, sour cream, BBQ sauce, and ranch mix to create the dressing.
Step 4: In a large bowl, combine the chilled pasta, bacon, beans, corn, tomatoes, onion, and cheese.
Step 5: Pour the dressing over the salad and toss well to ensure even coating.
Step 6: Stir in the fresh cilantro and refrigerate for 2 hours before serving.
Notes
Add diced jalapeños for a spicy kick or shredded chicken to make it a full meal.
