Description

Loaded Potato & Meatloaf Casserole is a hearty, comforting meal combining classic meatloaf flavors with creamy, cheesy potatoes. Perfect for busy weeknights or cozy dinners, this casserole is easy to prepare and sure to satisfy your whole family.


Ingredients

  • 1.5 pounds ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup ketchup
  • 2 pounds potatoes, peeled and sliced
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 2 tablespoons butter
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9x13-inch casserole dish.
  2. In a large bowl, combine ground beef, onion, garlic, breadcrumbs, milk, egg, Worcestershire sauce, salt, and pepper. Mix until well combined but do not overmix.
  3. Transfer the meat mixture into the casserole dish and shape into a loaf, spreading evenly across the bottom.
  4. Spread ketchup evenly over the top of the meatloaf layer.
  5. Boil sliced potatoes in salted water until tender, about 15-20 minutes.
  6. Drain potatoes and return to pot. Add sour cream, milk, butter, salt, and pepper. Mash until smooth and creamy.
  7. Spread mashed potatoes over meatloaf layer in casserole dish.
  8. Sprinkle shredded cheddar cheese and chopped green onions over the potatoes.
  9. Bake for 30-35 minutes until cheese is melted and bubbly.
  10. Let cool a few minutes before slicing and serving.

Notes

Customize by adding vegetables or spices to the meatloaf. Leftovers reheat well and the casserole can be frozen for up to 2 months.
