  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions or chives, chopped
  • Salt and pepper to taste

Instructions

  1. Prepare the Mashed Potatoes: Boil cubed potatoes in salted water for 15–20 minutes until tender. Drain and mash with milk, butter, salt, and pepper. Stir in cheese, bacon, and green onions. Set aside.
  2. Preheat Oven: Preheat oven to 350°F (175°C) and grease a loaf pan.
  3. Mix Meatloaf: Combine ground beef, breadcrumbs, onion, garlic, egg, Worcestershire, salt, pepper, and oregano in a bowl. Mix until just combined.
  4. Assemble: Press half of the meat mixture into the bottom of the loaf pan. Add mashed potatoes evenly on top. Finish with remaining meat mixture, pressing to seal.
  5. Bake: Bake for 1 hour or until internal temp reaches 160°F (70°C).
  6. Rest: Let rest for 10 minutes before slicing.
