Ingredients
- For the Meatloaf:
- 1 1/2 pounds ground beef (or mix of beef and pork)
- 1 cup breadcrumbs
- 1/2 cup onion, finely chopped
- 2 cloves garlic, minced
- 1 large egg
- 1 teaspoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper

- 2 pounds russet potatoes, peeled and cubed
- 1/2 cup milk
- 1/4 cup unsalted butter
- 1 cup shredded cheddar cheese

- 1/4 cup green onions or chives, chopped
- Salt and pepper to taste
Instructions
- Prepare the Mashed Potatoes: Boil cubed potatoes in salted water for 15–20 minutes until tender. Drain and mash with milk, butter, salt, and pepper. Stir in cheese, bacon, and green onions. Set aside.
- Preheat Oven: Preheat oven to 350°F (175°C) and grease a loaf pan.
- Mix Meatloaf: Combine ground beef, breadcrumbs, onion, garlic, egg, Worcestershire, salt, pepper, and oregano in a bowl. Mix until just combined.
- Assemble: Press half of the meat mixture into the bottom of the loaf pan. Add mashed potatoes evenly on top. Finish with remaining meat mixture, pressing to seal.
- Bake: Bake for 1 hour or until internal temp reaches 160°F (70°C).
- Rest: Let rest for 10 minutes before slicing.
- Serve: Garnish with extra chives or green onions. Serve warm.
