A soft and chewy sugar cookie loaded with crunchy oat cereal and colorful dehydrated marshmallows for a nostalgic treat.
Ingredients
1 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup light brown sugar, packed
2 large eggs, room temperature
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups Lucky Charms cereal (marshmallows separated from oat pieces)
Instructions
Step 1: Preheat oven to 350°F and line two baking sheets with parchment paper.
Step 2: Cream butter and both sugars in a large bowl until light and fluffy.
Step 3: Beat in eggs one at a time, then mix in the vanilla extract.
Step 4: Whisk together flour, baking soda, and salt in a medium bowl.
Step 5: Gradually add dry ingredients to the butter mixture, mixing until just combined.
Step 6: Fold in 1 cup of the oat cereal pieces and 1/2 cup of the cereal marshmallows.
Step 7: Scoop rounded tablespoons of dough onto baking sheets, spacing 2 inches apart.
Step 8: Bake for 10-12 minutes until edges are golden.
Step 9: Remove from oven and press remaining marshmallows into the tops while cookies are still soft.
Step 10: Cool on the pan for 5 minutes, then transfer to a wire rack.
Notes
Chill the dough for 30 minutes if you prefer a thicker, less-spread cookie. Always use room temperature eggs for a smoother batter.
