Ingredients
2 cups all-purpose flour
1/2 cup granulated sugar
1 tbsp baking powder
1/2 tsp salt
1/2 cup unsalted butter, softened
2 eggs
1 cup milk
1 tsp vanilla extract
1/2 cup cream cheese, softened
1 tbsp lemon zest

Instructions
Step 1: Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease it thoroughly.
Step 2: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
Step 3: In a separate medium bowl, whisk together the softened unsalted butter, eggs, milk, vanilla extract, softened cream cheese, and 1 tablespoon of lemon zest until smooth.
Step 4: Pour the wet ingredients into the dry ingredients. Mix with a spoon or spatula until just combined. Be careful not to overmix; a few lumps are fine.
Step 5: Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
