A decadent and comforting hybrid dish featuring a savory meatloaf base topped with creamy, homemade macaroni and cheese.
Ingredients
2 lbs ground beef (80/20)
1 cup panko breadcrumbs
1/2 cup milk
2 large eggs
1 small onion, finely diced
3 cloves garlic, minced
1/2 cup ketchup
16 oz elbow macaroni
1/4 cup unsalted butter
1/4 cup all-purpose flour
3 cups whole milk
2 cups sharp cheddar cheese, shredded
1 cup mozzarella cheese, shredded
1 tsp salt
1/2 tsp black pepper
Instructions
Step 1: Preheat oven to 375°F and grease a 9x13 baking dish.
Step 2: Mix ground beef, breadcrumbs, 1/2 cup milk, eggs, onions, and garlic. Press into the bottom of the pan.
Step 3: Spread ketchup over the beef and bake for 25 minutes.
Step 4: Boil macaroni until al dente, then drain.
Step 5: Melt butter in a pan, whisk in flour, and gradually add 3 cups milk until thickened. Stir in cheese until melted.
Step 6: Mix pasta with cheese sauce and pour over the meatloaf layer.
Step 7: Bake for an additional 20-25 minutes until golden and bubbling.
Notes
Ensure you drain the grease after the first bake to keep the mac and cheese layer creamy and not oily.
