A self-saucing, zesty dessert that creates a luscious lemon custard layer beneath a light, fluffy cake topping.
Ingredients
1/2 cup unsalted butter
1 1/2 cups all-purpose flour
1 1/2 cups granulated sugar, divided
2 teaspoons baking powder
1/2 teaspoon salt
1 cup whole milk
1 tablespoon lemon zest
1/2 cup fresh lemon juice
1 cup boiling water
Instructions
Step 1: Melt 1/2 cup butter in a 9x13 inch baking dish in an oven preheated to 350°F.
Step 2: Whisk together flour, 1 cup sugar, baking powder, and salt. Stir in milk and lemon zest to form a batter.
Step 3: Pour the batter over the melted butter in the dish. Do not stir.
Step 4: Mix the remaining 1/2 cup sugar with the lemon juice and sprinkle over the batter.
Step 5: Pour 1 cup boiling water over the top. Bake for 35-40 minutes without stirring until golden brown.
Notes
Do not stir the layers or the magic sauce will not form correctly at the bottom of the dish.
