- 1 cup buttermilk

- 21-ounce can lemon pie filling

Instructions
- Preheat oven to 350°F (175°C). Place the butter in a 9x9-inch baking dish and melt it in the oven for about 3-4 minutes. Remove and set aside.
- In a medium bowl, whisk together the flour, baking powder, salt, and sugar.
- Add the buttermilk, vanilla extract, and lemon extract to the dry ingredients. Stir until just combined; do not overmix.
- Pour the batter evenly over the melted butter in the baking dish. Do not stir.
- Spoon the lemon pie filling over the batter, leaving some spaces to allow the cobbler to bake through. Do not stir.
- Bake for 45-55 minutes, or until the top is golden brown and the edges have pulled away from the dish.
- Allow to cool slightly before serving. Optional: dust with powdered sugar and serve with vanilla ice cream or whipped cream.
Notes
For a fruity twist, add fresh berries like blueberries or raspberries to the lemon filling. To make a lime version, substitute lime juice and zest for the lemon. For a gluten-free option, use a gluten-free all-purpose flour blend.
