This easy Magic Lemon Cobbler bakes into a delightful dessert with a fluffy, cake-like topping and a gooey, vibrant lemon sauce underneath.
Ingredients
1 cup granulated sugar
1/2 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup milk
1/2 cup unsalted butter, melted
1/4 cup fresh lemon juice
Zest of 1 lemon
Optional: powdered sugar for dusting
Instructions
Step 1: Preheat your oven to 350°F (175°C) and lightly grease a 9x9-inch baking dish.
Step 2: In a large mixing bowl, whisk together the granulated sugar, all-purpose flour, baking powder, and salt until well combined.
Step 3: Stir in the milk, melted butter, and lemon zest. Mix until just combined; it’s okay if there are a few lumps.
Step 4: Pour the batter into the prepared baking dish. Do not stir.
Step 5: Gently pour the 1/4 cup of fresh lemon juice over the batter. Again, do not stir, as this is where the magic happens!
Step 6: Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the lemon filling is bubbly.
Step 7: Allow the cobbler to cool for a few minutes before serving to let the sauce set slightly.
Step 8: Cut into squares and serve warm, dusted with powdered sugar if desired. Enjoy with a scoop of vanilla ice cream or a dollop of whipped cream!
Notes
For an extra touch, serve with fresh berries or a sprig of mint. The cobbler is best enjoyed warm!
