  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
  • 21-ounce can lemon pie filling
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Place the butter in a 9x9-inch baking dish and melt it in the oven for about 3-4 minutes. Remove and set aside.
  2. In a medium bowl, whisk together the flour, baking powder, salt, and sugar.
  3. Add the buttermilk, vanilla extract, and lemon extract to the dry ingredients. Stir until just combined; do not overmix.
  4. Pour the batter evenly over the melted butter in the baking dish. Do not stir.
  5. Spoon the lemon pie filling over the batter, leaving some spaces to allow the cobbler to bake through. Do not stir.
  6. Bake for 45-55 minutes, or until the top is golden brown and the edges have pulled away from the dish.
  7. Allow to cool slightly before serving. Optional: dust with powdered sugar and serve with vanilla ice cream or whipped cream.

Notes

For a fruity twist, add fresh berries like blueberries or raspberries to the lemon filling. To make a lime version, substitute lime juice and zest for the lemon. For a gluten-free option, use a gluten-free all-purpose flour blend.
