  • 1/2 cup crushed pineapple, drained
  • 1 can (11 oz) mandarin orange segments, drained
  • 1/2 cup crushed pineapple, drained (for topping)
  • 1/4 cup granulated sugar (for topping)
  • 1 tbsp cornstarch
  • 1/4 cup water
  • Whipped cream for topping (optional)
  • Fresh mint for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a medium bowl, combine flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat softened butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Gradually add dry ingredients alternating with mandarin orange juice, mixing just until combined.
  6. Fold in crushed pineapple.
  7. Pour batter into prepared pan and smooth top.
  8. In a small saucepan, combine mandarin orange segments, crushed pineapple, sugar, cornstarch, and water; mix well.
  9. Bring to a boil over medium heat, stirring constantly.
  10. Reduce heat and simmer 5 minutes until thickened; let cool slightly.
  11. Spread topping evenly over cake batter.
  12. Bake 40-45 minutes or until toothpick inserted in center comes out clean.
  13. Cool in pan 10 minutes, then transfer to wire rack to cool completely.
  14. Optional: Top with whipped cream and garnish with fresh mint.
