Instructions
- Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a medium bowl, combine flour, baking powder, baking soda, and salt.
- In a large bowl, beat softened butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
- Gradually add dry ingredients alternating with mandarin orange juice, mixing just until combined.
- Fold in crushed pineapple.
- Pour batter into prepared pan and smooth top.
- In a small saucepan, combine mandarin orange segments, crushed pineapple, sugar, cornstarch, and water; mix well.
- Bring to a boil over medium heat, stirring constantly.
- Reduce heat and simmer 5 minutes until thickened; let cool slightly.
- Spread topping evenly over cake batter.
- Bake 40-45 minutes or until toothpick inserted in center comes out clean.
- Cool in pan 10 minutes, then transfer to wire rack to cool completely.
- Optional: Top with whipped cream and garnish with fresh mint.
