Description

A vibrant and crunchy tropical slaw featuring sweet mangoes, shredded cabbage, and a zesty lime-sesame dressing.


Ingredients

2 pieces ripe mangoes, peeled and diced
2 cups green cabbage, finely shredded
1 large carrot, grated
1 piece red bell pepper, thinly sliced
¼ cup red onion, thinly sliced
¼ cup fresh cilantro, chopped
3 tablespoons lime juice
2 tablespoons honey or maple syrup
1 tablespoon sesame oil
to taste salt and pepper


Instructions

Step 1: Shred the cabbage finely and grate the carrot into a large mixing bowl.
Step 2: Thinly slice the red bell pepper and red onion, then add them to the bowl with the cabbage.
Step 3: Carefully peel the mangoes, remove the pits, and dice the flesh into half-inch cubes before adding them to the vegetable mix.
Step 4: In a small separate bowl, whisk together the lime juice, honey, sesame oil, salt, and pepper to create the dressing.
Step 5: Pour the dressing over the fruit and vegetables, add the chopped cilantro, and toss everything together until evenly coated.
Step 6: Let the slaw rest for 15 minutes in the refrigerator before serving to allow the flavors to combine.

Notes

Use maple syrup to make this dish fully vegan. For extra crunch, add toasted sesame seeds or sliced almonds.
