A vibrant and nutrient-dense meal prep bowl featuring tender glazed chicken and caramelized sweet potatoes over a fluffy grain base.
Ingredients
2 medium sweet potatoes, peeled and diced into 1-inch cubes
2 tablespoons olive oil
1 teaspoon garlic powder
4 chicken breasts
3 tablespoons maple syrup
2 tablespoons Dijon mustard
1 cup quinoa or brown rice, dry
Fresh parsley or cilantro for garnish
Salt and black pepper to taste
Instructions
Step 1: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Step 2: Toss the diced sweet potatoes with olive oil, garlic powder, salt, and pepper. Spread on half of the baking sheet.
Step 3: Whisk the maple syrup and Dijon mustard together in a small bowl.
Step 4: Place the chicken breasts on the other half of the sheet and brush with half of the glaze mixture.
Step 5: Roast for 20-25 minutes until the chicken is cooked through (165°F) and potatoes are tender.
Step 6: Prepare the quinoa or rice according to package directions while the chicken and potatoes roast.
Step 7: Slice the chicken and assemble the bowls by dividing the grains, potatoes, and chicken evenly.
Step 8: Drizzle with the remaining glaze and garnish with fresh herbs.
Notes
For extra crunch, add roasted pumpkin seeds or pecans before serving.
