A perfect balance of sweet and savory, these carrots are roasted until tender and coated in a rich maple glaze.
Ingredients
1.5 lbs carrots, peeled and sliced into batons
2 tablespoons olive oil
3 tablespoons pure maple syrup
1/2 teaspoon sea salt
1/4 teaspoon cracked black pepper
4-5 sprigs fresh thyme
Optional: Fresh parsley for garnish
Instructions
Step 1: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper or silicone mat.
Step 2: In a large bowl or directly on the baking sheet, toss the prepared carrots with olive oil, salt, and pepper until well coated.
Step 3: Spread the carrots in a single layer, ensuring they aren't crowded, and add the fresh thyme sprigs on top.
Step 4: Roast in the oven for 20 minutes, or until the carrots are starting to become tender when pierced with a fork.
Step 5: Remove the tray from the oven. Drizzle the pure maple syrup over the carrots and use tongs to toss them until evenly coated.
Step 6: Return the tray to the oven for an additional 10-15 minutes, or until the maple glazed roasted carrots are caramelized and slightly charred at the edges.
Step 7: Remove from the oven, discard the woody thyme stems, and garnish with fresh parsley if desired. Serve warm.
Notes
For the best results, use Grade A dark maple syrup for a more intense flavor. Ensure the carrots are cut to a similar size for even cooking.
