Description

A moist, spiced cake made with roasted sweet potatoes and topped with a rich, buttery maple syrup glaze.


Ingredients

1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 cup roasted sweet potato puree
1/2 cup sour cream
1 teaspoon vanilla extract
1/2 cup pure maple syrup (for glaze)
1 cup powdered sugar (for glaze)
2 tablespoons melted butter (for glaze)


Instructions

Step 1: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan or a bundt pan thoroughly.
Step 2: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.
Step 3: In a large mixing bowl, cream the softened butter and granulated sugar together until the mixture is light and fluffy.
Step 4: Beat in the eggs one at a time, then stir in the sweet potato puree and vanilla extract until smooth.
Step 5: Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream, mixing just until combined.
Step 6: Pour the batter into the prepared pan and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
Step 7: While the cake cools slightly, whisk together the maple syrup, powdered sugar, and melted butter to create the glaze.
Step 8: Drizzle the glaze generously over the warm maple glazed sweet potato cake before serving.
