Description

A crunchy, chewy, and naturally sweetened snack featuring the classic autumn flavors of maple syrup and toasted pecans.


Ingredients

2 1/2 cups old-fashioned rolled oats
1 cup pecans, roughly chopped
1/2 cup pure maple syrup
1/4 cup coconut oil or melted butter
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon sea salt


Instructions

Step 1: Preheat your oven to 325°F (165°C) and line an 8x8 inch square baking pan with parchment paper.
Step 2: Spread pecans on a baking sheet and toast for 5-7 minutes until fragrant, then let cool slightly.
Step 3: In a large bowl, mix together the oats, toasted pecans, cinnamon, and sea salt.
Step 4: In a small saucepan, combine the maple syrup and coconut oil over medium heat until melted and well combined.
Step 5: Stir in the vanilla extract to the wet mixture, then pour over the dry ingredients, stirring until thoroughly coated.
Step 6: Transfer the mixture to the prepared pan and press down very firmly using a spatula or another piece of parchment paper.
Step 7: Bake for 25-30 minutes or until the edges are golden brown. Let cool completely in the pan for at least 2 hours before slicing.

Notes

Ensure the bars are completely cooled before cutting to prevent them from crumbling. For an extra crunch, toast the oats for 5 minutes before mixing.
