Description

A crisp and flavorful Italian-style biscotti infused with real maple syrup and a blend of warm autumn spices, perfect for dipping in coffee.


Ingredients

2 1/2 cups all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon salt
3 large eggs, room temperature
1/2 cup pure maple syrup (Grade A Dark)
1 teaspoon vanilla extract
1/2 teaspoon maple extract (optional for extra punch)


Instructions

Step 1: Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
Step 2: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
Step 3: In a separate medium bowl, beat the eggs slightly, then stir in the maple syrup, vanilla extract, and maple extract.
Step 4: Pour the wet ingredients into the dry ingredients and stir with a spatula until a sticky dough forms. Do not over-mix.
Step 5: Turn the dough onto the prepared baking sheet. With lightly floured or damp hands, shape the dough into a log about 12 inches long and 4 inches wide.
Step 6: Bake for 25-30 minutes, or until the log is firm to the touch and slightly golden around the edges.
Step 7: Remove from the oven and let cool on the pan for 15 minutes. Lower the oven temperature to 325°F (160°C).
Step 8: Transfer the log to a cutting board. Using a serrated knife, cut the log diagonally into 1/2-inch thick slices.
Step 9: Place the slices back onto the baking sheet, cut side down. Bake for 10 minutes, then flip each biscotti over and bake for another 10 minutes until crisp.
Step 10: Transfer the biscotti to a wire rack to cool completely before storing.

Notes

Ensure you use real maple syrup for the best results. For extra crunch, add toasted pecans to the dough.
