Ingredients
3 very ripe bananas, mashed
1/2 cup unsalted butter, melted
1/2 cup pure maple syrup
1/4 cup brown sugar, packed
1 large egg, room temperature
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup walnuts, toasted and chopped
Instructions
Step 1: Preheat your oven to 350°F (175°C) and generously grease a 9x5-inch loaf pan with butter or non-stick spray.
Step 2: In a large mixing bowl, combine the melted butter, maple syrup, and brown sugar. Whisk until well combined.
Step 3: Add the egg and vanilla extract to the mixture, whisking until smooth and fully incorporated.
Step 4: Stir in the mashed bananas until evenly distributed throughout the wet ingredients.
Step 5: In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Slowly add the dry ingredients to the wet ingredients, stirring with a spatula just until no streaks of flour remain.
Step 6: Gently fold in the toasted walnuts, ensuring they are evenly spread through the batter.
Step 7: Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Step 8: Bake for 60-65 minutes, or until a toothpick inserted into the center of the loaf comes out clean or with just a few moist crumbs.
Step 9: Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
Always use real maple syrup for the best flavor. Topping the bread with extra walnuts before baking adds a nice crunch.
