A moist and vibrant quick bread featuring the classic pairing of sweet cherries and nutty almond extract.
Ingredients
1 cup sugar
1/2 cup vegetable or canola oil
2 large eggs
1 teaspoon vanilla extract
1 1/2 teaspoons almond extract
2 1/4 cups all-purpose flour
2 teaspoons baking powder
8 ounces maraschino cherries, chopped, juice reserved
1 cup powdered sugar (for glaze)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan thoroughly.
Step 2: In a large mixing bowl, whisk together the sugar, oil, eggs, vanilla, and almond extract until well combined.
Step 3: In a separate bowl, whisk the flour and baking powder together.
Step 4: Gradually add the dry ingredients to the wet mixture, stirring just until no large flour streaks remain.
Step 5: Fold in the chopped maraschino cherries and 2 tablespoons of the reserved juice for color.
Step 6: Pour the batter into the prepared pan and bake for 45-55 minutes or until a toothpick comes out clean.
Step 7: Cool completely on a wire rack before dusting with powdered sugar or drizzling with a cherry-juice-infused glaze.
Notes
Toss chopped cherries in flour before adding to the batter to prevent them from sinking to the bottom of the pan.
