Instructions
- In a large bowl, combine sliced cucumbers, halved tomatoes, and sliced red onion. Add chopped parsley or dill if using.
- In a separate bowl, whisk together vinegar, olive oil, sugar, salt, pepper, and garlic until well combined.
- Drizzle marinade over the vegetables and toss gently to coat evenly.
- Cover and refrigerate for at least 30 minutes, or up to overnight for deeper flavor.
