Ingredients
12-15 large Medjool dates
1/2 cup (120g) mascarpone cheese, softened
1/4 teaspoon vanilla extract (optional)
Pinch of cinnamon (optional)
1/4 cup fresh pomegranate seeds (arils)
2 tablespoons honey, plus more for drizzling
Instructions
Step 1: Carefully pit the dates. Using a small paring knife, make a lengthwise slit along one side of each date and remove the pit. Be careful not to cut all the way through, keeping the date intact for stuffing.
Step 2: In a small bowl, combine the softened mascarpone cheese, vanilla extract (if using), and cinnamon (if using). Stir gently until smooth and well combined.
Step 3: Fill each pitted date with approximately 1-2 teaspoons of the mascarpone mixture. You can use a small spoon or a piping bag for a neater finish. Overfill slightly to create a nice mound.
Step 4: Arrange the stuffed dates on a serving platter. Sprinkle generously with fresh pomegranate seeds over the mascarpone filling.
Step 5: Drizzle the dates with honey just before serving. A little extra honey adds a lovely sheen and boosts the sweetness. Serve immediately or chill for a short time.
Notes
For an extra touch, sprinkle with finely chopped pistachios or a tiny pinch of flaky sea salt before serving. You can also mix a small amount of orange zest into the mascarpone for a citrusy note.
