Description
A tropical, incredibly moist banana bread inspired by the roadside stands of Maui, featuring macadamia nuts and overripe bananas.
Ingredients
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
3 very ripe bananas, mashed
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped macadamia nuts
1/4 cup shredded coconut (optional)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
Step 2: In a large bowl, cream together the softened butter and sugar until light and fluffy.
Step 3: Beat in the eggs one at a time, then stir in the vanilla extract and mashed bananas.
Step 4: In a separate bowl, whisk the flour, baking soda, and salt together.
Step 5: Gradually stir the dry ingredients into the banana mixture until just combined; do not overmix.
Step 6: Fold in the chopped macadamia nuts and shredded coconut if using.
Step 7: Pour the batter into the prepared loaf pan and bake for 60-65 minutes, or until a toothpick comes out clean.
Step 8: Let the bread cool in the pan for 10 minutes before moving to a wire rack.
Notes
Always use bananas with black spots for the best flavor. For an extra tropical touch, add a tablespoon of dark rum to the wet ingredients.
