- 1 large egg

Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with muffin liners.
- In a large bowl, whisk together the flour, baking powder, sugar, and salt.
- In another bowl, combine the milk, egg, melted butter, and maple syrup. Mix until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
- In a non-stick skillet, cook the eggs over medium heat, scrambling them until set. Season with salt and pepper to taste. If using sausage or bacon, cook them according to package instructions.
- Spoon about 1 tablespoon of pancake batter into each muffin cup, followed by a layer of scrambled eggs, cheese, and optional meat. Top with another tablespoon of pancake batter to cover the filling.
- Place the muffin tin in the preheated oven and bake for 15-18 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack. Serve warm, drizzled with extra maple syrup if desired.
Notes
For a vegetarian version, omit the meat and add sautéed spinach or mushrooms. Experiment with different cheeses like pepper jack for a spicy kick or mozzarella for a milder flavor. For a sweet twist, add blueberries or chocolate chips to the pancake batter.
