Ingredients

  • 1 large egg
  • 2 tablespoons melted butter

  • 4 large eggs
  • 1 cup shredded cheese (cheddar or your choice)

  • Cooked breakfast sausage patties or bacon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with muffin liners.
  2. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  3. In another bowl, combine the milk, egg, melted butter, and maple syrup. Mix until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  5. In a non-stick skillet, cook the eggs over medium heat, scrambling them until set. Season with salt and pepper to taste. If using sausage or bacon, cook them according to package instructions.
  6. Spoon about 1 tablespoon of pancake batter into each muffin cup, followed by a layer of scrambled eggs, cheese, and optional meat. Top with another tablespoon of pancake batter to cover the filling.
  7. Place the muffin tin in the preheated oven and bake for 15-18 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack. Serve warm, drizzled with extra maple syrup if desired.

Notes

For a vegetarian version, omit the meat and add sautéed spinach or mushrooms. Experiment with different cheeses like pepper jack for a spicy kick or mozzarella for a milder flavor. For a sweet twist, add blueberries or chocolate chips to the pancake batter.
