Mediterranean Chicken Zucchini Bake

Description

A healthy and easy-to-make casserole combining lean chicken, fresh zucchini, ripe tomatoes, and melted cheeses with Mediterranean flavors.


Ingredients

2 boneless, skinless chicken breasts (about 1 lb)
2 tablespoons olive oil, divided
1 teaspoon garlic powder
1 teaspoon dried oregano
½ teaspoon salt
¼ teaspoon black pepper
1 medium zucchini, thinly sliced
1 cup cherry tomatoes, halved (or 1 large tomato, chopped)
½ small onion, chopped
1 cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
2 tablespoons fresh parsley, chopped (for garnish)


Instructions

Step 1: Preheat your oven to 400°F (200°C).
Step 2: In a small bowl, combine 1 tablespoon of olive oil, garlic powder, oregano, salt, and pepper. Rub this mixture evenly over the chicken breasts.
Step 3: Arrange the seasoned chicken breasts in a shallow baking dish.
Step 4: Scatter the chopped onion, thinly sliced zucchini, and halved tomatoes around and on top of the chicken. Drizzle with the remaining 1 tablespoon of olive oil and season the vegetables with a pinch of salt and pepper.
Step 5: Sprinkle the shredded mozzarella and grated Parmesan cheese generously over the chicken and vegetables.
Step 6: Bake for 20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the cheese is bubbly and golden. If you prefer a crispier cheese topping, broil for 2-3 minutes at the end, watching carefully.
Step 7: Remove from the oven and let the dish rest for 5-10 minutes before serving. This allows the juices to redistribute, keeping the chicken moist.
Step 8: Garnish with fresh chopped parsley and serve warm with your favorite sides.

Notes

For best results, slice chicken breasts into thinner cutlets to ensure even cooking. If you like a spicy kick, add a pinch of red pepper flakes with the seasonings.
