Ingredients
2 large egg yolks
3 large egg whites
2 tablespoons whole milk
1 teaspoon vanilla extract
2 tablespoons sifted all-purpose flour
1 teaspoon baking powder
2 tablespoons granulated sugar
1 pinch salt
3 drops lemon juice
Instructions
Step 1: Separate the eggs, placing 3 whites in a cold mixing bowl and 2 yolks in a separate bowl.
Step 2: To the yolks, add milk and vanilla, then whisk in the sifted flour and baking powder until smooth.
Step 3: Beat the egg whites with lemon juice and salt, gradually adding sugar until stiff peaks form.
Step 4: Gently fold a small portion of meringue into the yolk mixture, then fold in the rest carefully to maintain air.
Step 5: On a low-heat non-stick pan, pipe the batter into a Mickey shape, add a teaspoon of water, and steam covered for 5 minutes.
Step 6: Flip the pancakes carefully, add more water, and steam covered for 4 more minutes until set.
Notes
Ensure your whisking bowl is completely grease-free for the best meringue height. Use a lid to ensure even cooking.
