Ingredients
1/2 cup unsalted butter, melted
1 cup granulated sugar
1/2 cup light brown sugar, packed
2 large eggs
1 tsp vanilla extract
1/2 cup Dutch-process cocoa powder
1/2 cup all-purpose flour
1/4 tsp salt
1/2 cup softened butter (for frosting)
2 cups powdered sugar
1 tsp peppermint extract
2 drops green gel food coloring
1 cup semi-sweet chocolate chips (for ganache)
2 tbsp butter (for ganache)
Instructions
Step 1: Preheat oven to 350°F and line a square baking pan with parchment paper.
Step 2: Whisk melted butter and sugars together, then add eggs and vanilla until shiny.
Step 3: Fold in sifted cocoa, flour, and salt until just combined; bake for 25 minutes.
Step 4: Cool brownies completely. Beat frosting ingredients until fluffy and spread over the base.
Step 5: Melt ganache ingredients, pour over the chilled mint layer, and set before slicing.
Notes
