Description

A wonderfully easy and delicious mixed berry crisp featuring a medley of strawberries, blueberries, and blackberries topped with a golden, crunchy oat streusel.


Ingredients

4 cups mixed berries (fresh or frozen strawberries, blueberries, blackberries)
1/2 cup granulated sugar (for filling)
2 tablespoons cornstarch
1/2 teaspoon ground cinnamon
1/2 cup all-purpose flour
1/2 cup rolled oats
1/2 cup packed brown sugar
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, cold and diced


Instructions

Step 1: Preheat your oven to 375°F (190°C). Grease an 8-inch square or 7x11-inch baking dish to prevent sticking.
Step 2: Wash and gently pat dry your mixed berries. Place them into the greased baking dish. Sprinkle with granulated sugar, cornstarch, and cinnamon, then toss the mixture together to coat the berries evenly. Set aside to let the berries release their juices.
Step 3: In a separate bowl, combine the flour, rolled oats, brown sugar, and salt. Add cold diced butter to the mixture and use a fork or your hands to cut the butter into the dry ingredients until the mixture forms coarse crumbs.
Step 4: Pour the streusel topping over the berry mixture, spreading it evenly.
Step 5: Place the dish in the preheated oven and bake for about 35-40 minutes. The topping should turn golden brown, and the berry filling should bubble.
Step 6: Allow the crisp to cool for 5-10 minutes before serving, letting the filling thicken further.

Notes

For an extra touch, serve warm with a scoop of vanilla ice cream or a dollop of whipped cream. You can also mix in other fruits like raspberries or peaches!
