Description
A incredibly tender and zesty citrus loaf cake made with fresh orange juice and yogurt for maximum moisture.
Ingredients
1½ cups all-purpose flour (190 g)
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
¾ cup sugar (150 g)
½ cup vegetable oil (120 ml)
2 large eggs
½ cup fresh orange juice (120 ml)
1 tbsp orange zest
½ cup yogurt or sour cream (120 g)
1 tsp vanilla extract
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
Step 2: In a medium bowl, whisk the flour, baking powder, baking soda, and salt.
Step 3: In a large bowl, whisk the sugar, eggs, oil, yogurt, orange juice, zest, and vanilla until smooth.
Step 4: Fold the dry ingredients into the wet mixture using a spatula until just combined.
Step 5: Pour the batter into the loaf pan and bake for 45-55 minutes.
Step 6: Cool in the pan for 10 minutes, then move to a wire rack to cool completely.
Notes
For an extra punch, brush the warm cake with a mixture of orange juice and sugar while it's still cooling.
