A quick and satisfying Asian-inspired dish featuring ground beef, noodles, and vegetables tossed in a sweet and savory garlic-ginger soy sauce.

- 8 oz noodles (linguine, udon, or your choice)
- 1 lb ground beef
- 3 cloves garlic, minced
- 1-inch piece of ginger, minced
- 1/4 cup soy sauce
- 1/4 cup hoisin sauce
- 1 tablespoon brown sugar
- 1 tablespoon sesame oil
- 2 green onions, chopped
- 1 cup mixed vegetables (bell peppers, carrots, and snap peas work well)
- Salt and pepper to taste
- Sesame seeds for garnish (optional)
Instructions
- Boil noodles in salted water until al dente. Drain and set aside.
- In a skillet or wok, heat sesame oil over medium-high heat. Cook ground beef until browned, about 5-7 minutes. Drain excess fat if needed.
- Add garlic and ginger; sauté for 1-2 minutes until fragrant.
- Stir in soy sauce, hoisin sauce, and brown sugar. Simmer for a few minutes.
- Add mixed vegetables and cook for 3-4 minutes until tender-crisp.
- Add cooked noodles to the skillet and toss to combine everything well.
- Remove from heat. Garnish with green onions and sesame seeds if desired. Serve hot.
Notes
Substitute beef with tofu or tempeh for a vegetarian option. Add chili flakes or sriracha for spice. Use rice or zucchini noodles for a gluten-free version. Leftovers keep well in the fridge for 3 days.
